However, the two are quite distinct in ingredients, flavors, and preparation methods. This time, I will explain the recipe and ingredients of traditional Korean gimbap.

Here’s a simple and classic kimbap (김밥) recipe that includes the basic ingredients. You can easily customize it based on your preferences!


Ingredients

For the Rice:

  • 2 cups of short-grain white rice
  • 1 tablespoon sesame oil
  • 1 teaspoon salt
  • 1 teaspoon sesame seeds (optional)


For the Fillings:

  • 4 sheets of roasted seaweed (gim)
  • 3 eggs
  • 1 medium carrot, julienned
  • 1 cucumber, julienned
  • 1 bunch of spinach, blanched and seasoned with a little sesame oil and salt 2 or 3 crab sticks (or imitation crab meat)
  • 1 or 2 slices of ham, cut into thin strips (optional)
  • 1 yellow pickled radish (danmuji), cut into thin strips
  • Sesame seeds for garnish


Directions

1. Prepare the Rice:

  • Cook the short-grain rice in a rice cooker or on the stove. Once it's done, let it cool slightly and then mix it with sesame oil, salt, and sesame seeds (if using). Set aside.


2. Prepare the Fillings:

  • Egg: Beat the eggs, add a pinch of salt, and make a thin omelet in a frying pan. Once cooked, slice it into long, thin strips.
  • Carrot: Sauté the julienned carrot in a little bit of oil for a few minutes until slightly softened.
  • Cucumber: Cut the cucumber into thin, long strips and sprinkle with a little salt. Let it sit for a few minutes, then gently squeeze out excess water.
  • Spinach: Blanch the spinach in boiling water for about 30 seconds. Drain and cool in cold water, then squeeze out the excess moisture. Mix the spinach with a bit of sesame oil and salt.
  • Crab sticks: Use them as-is or lightly steam them for a softer texture.
  • Ham: Fry the ham strips in a pan until lightly browned.


3. Rolling the Kimbap:

  • Place a sheet of seaweed on a bamboo mat (or a clean towel if you don't have a mat), shiny side down.
  • Spread a thin layer of seasoned rice over about 2/3 of the seaweed, leaving the top edge (about 2 cm) free so it seals when rolled.
  • Place the prepared fillings (carrots, cucumber, spinach, crab sticks, egg, and pickled radish) horizontally across the rice, near the bottom.
  • Lift the bamboo mat from the bottom and begin rolling the seaweed tightly, pressing down gently to secure the fillings. Roll all the way up, using the exposed seaweed edge to seal the roll.
  • Repeat with the remaining seaweed sheets and ingredients.


4. Slice and Serve:

  • Brush the outside of the kimbap roll with a little sesame oil to give it a shine and prevent sticking.
  • Use a sharp knife to slice the roll into bite-sized pieces, wiping the knife with a damp cloth between slices to ensure clean cuts.
  • Sprinkle with sesame seeds as garnish (optional).


Tips:

  • Customizing Fillings: You can add or swap out ingredients like tuna mixed with mayo, bulgogi (Korean marinated beef), or even kimchi.
  • Serving: Kimbap can be served as-is or with a dipping sauce like soy sauce mixed with a little vinegar or mustard.
